Baked Salmon in a Lemony Butter Sauce with Mushroom and Herb Risotto and Asparagus


I never allocate more than 30 minutes to cooking daily family dinners, but it does not mean that I compromise the taste and nutrition value ~ using high quality whole food ingredients actually help making dinners easy and delicious. 

Baked salmon is my go-to dish for any occasion, from a weeknight family meal to a formal affair. Salmon always comes out very moist and flavorful, and everyone loves it. 

So what's for dinner tonight? Baked salmon with mushroom and herbs risotto and asparagus lightly sautéed in garlic and lemon sauce. 

Dinner shopping list for 4 servings
1 lb salmon from the fresh seafood isle
1 box risotto with mushroom and herbs 
1 pack of organic asparagus
4 oz butter
1 lemon
4 garlic cloves
Dijon mustard (or any mustard you can find at home. You only need 1/4 tsp.)
Salt and Pepper

30 minutes, start counting now:

Baked Salmon in a Lemon Butter Sauce 10 min prep time, 20-25 min cook time.
For 1 lb salmon fillet I used:
2 tbs butter, melted
2 tbs lemon juice
2 small cloves garlic, minced
1/4 tsp salt
1/4 tsp freshly ground pepper
Preheat oven to 425 F. Mix all the sauce ingredients. Pat salmon dry and place in a baking dish. Brush salmon fillets with the lemony butter sauce. Bake uncovered at 425 F for about 20-25 minutes or until fish flakes easily with a fork.
Risotto 5 min prep time, 15-20 min cook time
Everything I have is in the box. I use Mushroom & Herb Risotto from Trader Joe's. All I need to do is to sauté rice lightly in olive oil, add water, herbs, and let it boil vigorously for about 15 minutes. 
*I am actually thinking to make risotto from scratch next time. This classic risotto recipe from CulinaryArts looks easy and delicious. 
Asparagus lightly sautéed in garlic sauce prep and cooking time 5-10 min
Sauce ingredients:
2 cloves garlic minced
1/4 tsp dijon mustard
1 tbs lemon
1 tbs butter, melted
Mix all the ingredients while melting butter in a large stainless steel sauté pan over medium high heat. Trim the asparagus, add to the pan, and sauté for about 30 seconds. Act fast because the pan is very hot. Add the sauce, stir, and sauté for another 30 seconds. Take the skillet off the heat and transfer the asparagus to a plate. 
Asparagus come out crispy on the outside and juicy on the inside!
Voila. Delicious dinner is served in under 30 minutes. Enjoy!
