A few days ago, as I was thinking of the upcoming July 4th party, I decided to bake Red White and Blue Vanilla Cupcakes with blueberries and strawberries, or any kind of Summer berries. What a great way to sweeten the holiday!
Being a big proponent of healthy eating, I used to fear using food coloring, but nowadays, there are so many natural food coloring available that I thought that it would be great to create fun and colorful deserts. After all, July 4th is coming only once a year!
So I prepared the vanilla cupcakes batter, divided it into two halves, and mixed in the red color in one half and the blue color in the other half. Then I filled 6 paper lined muffin cups with the red batter and another 6 paper lined muffin cups with the blue batter. And continued baking the cupcakes according to the recipe - baked at 350 degrees for about 14 minutes or until a toothpick inserted near the center comes out clean.
About 3-5 minutes after I took the cupcakes out of the oven, I transferred them to the cooling rack and let them cool completely (about 1 hour).
While the cupcakes were cooling down, I made Vanilla buttercream and left it white.
Once the cupcakes were completely cooled, I removed the paper lining and cut the cupcakes in half ~ I thought that I would use a red bottom of one cupcake and a blue top from another cupcake or vice versa.
Then it was time to decorate ~ the best part!
1. Cupcakes in Mason Jars
I love using mason jars not only for canning, but also as drinking glasses, as candle holders, and individual cake containers.
2. Cupcakes in wine glasses. Well, why not?
This one is Cupcake for Two to share -
Cut two cupcakes in four pieces each. Simply layer the pieces alternating the colors, and frost after each layer.
Voila!

A nice surprise at the bottom of the glass ~ before stacking up the cupcakes, I put 1/2 tsp Strawberry Jam at the bottom of the glass. It paired very well with the cake and buttercream!
